Welcome to a healthier you! The BCANS cookbook has a wide variety of delicious recipes.  It also includes a section of high caloric recipes for cancer patients, such as Boost Creamsicles, High Protein Custard, and Maximum Mashed Potatoes.

Brown Rice & Chickpea Salad (Dr. Jennifer Salib Huber)

2 Tbsp. Dijon mustard

2 Tbsp. balsamic vinaigrette

1 Tbsp. olive oil

1 1/2 cups cooked brown rice

1 can chickpeas

1 1/3 cups chopped cilantro

1 1/3 cups chopped parsley

1/2 cup chopped tomatoes

Combine first three ingredients together in a small bowl. Add remaining ingredients to a large bowl and mix well.  Add first three ingredients. Chill one hour before serving.
